Introduction
Liquor is an alcoholic beverage produced by the distillation of grains, fruits, vegetables and sugar that have already gone through alcoholic fermentation. There are two main types of liquor: white liquor and brown liquor. White liquor is clear, colourless, and highly filtered for clarity. Examples of white liquor include white tequila, white rum, gin, and vodka. The process of making white liquor involves water mashing, fermentation, distillation, blending, filtration, and bottle filling and Brown liquor refers to liquor that has been aged for some time, like dark rum, brandy, whiskey, and tequila.
The Process of Liquor Application:
The white liquor process begins with the gathering of raw materials, which vary depending on the type of liquor being produced. For example, white vodka is made using grains, potatoes, corn, rice, and fruits.

Following the water-mashing process, fermentation takes place, which is the process by which sugar is converted into alcohol and carbon dioxide through the addition of yeast. The yeast multiplies and produces carbon dioxide, which bubbles away and creates the unique taste and flavour of each liquor.
In distillation, liquids are separated into smaller parts in order to achieve higher purity. The liquid is heated until it boils and vapours rise, then cooled and condensed to form a liquid. Blending is the process of mixing two or more brews to create a distinct alcoholic beverage. In the case of white liquors, flavouring ingredients such as herbs, spices, and fruits are added during the blending process to create a distinct flavour after blending, the filtrations have to be done for the betterment of the final product. The last process involves the taking of different shapes and sizes of bottles as per the variants of drinks. Then, they are filled up with white liquor.
Brown liquor, however, has a more complex production process. It includes gathering the raw materials, such as grains, grapes, sugar cane, wheat, and oats, a water mashing process, a fermentation process, distillation, maturation, blending, hazing, guarding, and finally filling the bottles.
The maturation process of brown liquor involves the use of a wooden vessel, also known as a barrel, to age it. Carbon-activated filters are not used in brown liquor filtration as they are utilized in white liquor filtration to remove colour, texture, and odour. Instead, guard filters are used to remove undesirable components produced during the maturation process. Liquor polishing is very important for making white liquor clear. In the liquors process the microorganism develops till the liquor is made. So, the liquor has to be filtered with the filter process for removing haze, microorganisms and other unwanted bacteria.
How Filtration can help?
Filtration is an important step in the production of white liquors, as filters are used to remove undesirable components while preserving desired aromas and flavours. Carbon is often used in filtration, as it is created from ash and acts as a filter for harsher elements of the liquor, creating important flavour components, such as vanillin, tannins, and spices. Activated carbon is also used to remove unwanted colour and flavour from the liquor.

Filtration also helps to control chill haze from the liquor, by removing high amounts of long-chain fatty acid esters at ambient temperatures. The process also polishes the liquor to give it a smooth texture.
